Here's the deal- I really enjoy cooking, but lately I can't think of any new recipes that are somewhat fast and somewhat inexpensive. Any ideas? I love to cook but I'm having a hard time thinking of things and I am starting to dread it! Help! In return, I will share a couple of my favorite recipes that are inexpensive and easy to make with you.
Chicken Roll-ups
2 cups cooked chicken (or 2 cans...but I hate canned chicken)
6 oz. cream cheese, softened
1 can cream of chicken soup
pinch of Thyme
4-5 green onions (optional, I hate green onions)
Pillsbury Crescent Rolls
Mix all ingredients, except rolls, together thoroughly. Place 1 spoonful of mixture in center of crescent rolls. Roll up as directions on package. Brush with butter and bake at 350 degrees for 20-25 minutes. Serve hot with chicken gravy (or plain....). Instead of gravy, sometimes I take another can of cream of chicken soup and dilute it a little with milk and heat it. It works great that way too.
Chicken Cordon Bleu
As many chicken breasts are you are going to eat, in our case, I eat one and Josh eats 2.
Sliced Swiss Cheese
Sliced Ham
1 can cream of chicken soup
1 tbsp sour cream
1/2 to 3/4 c. milk
1 tbsp lemon juice
Pound out each chicken breast between 2 sheets of wax paper. Lay cheese and ham inside each and roll up with a toothpick so the cheese can't come out. Bake at 350 for 40 minutes to an hour.
For the sauce, mix all the remaining ingredients right before you take the chicken out of the oven.
